Finally, if you’re running an operation that has a working kitchen for more than 12 hours every day, then it’s very important that you have your extraction cleaning occur at least once every 3 months, potentially more frequently if you’re working with deep fat frying and food is cooked with large amounts of fats and oils, such as fast food establishments.
